Research on qualitative test of vitamin C content in various foods has been done. In this simple study used samples such as lime, tomato, carrot, bengkoang cucumber. As a control used 500 vitamin C tablets taken as many as 20 grains dissolved in 10 ml air.Sebagai indicator used betadine solution containing betadine containing povidone iodine 10% which is equivalent to 1% iodine. Iodine is actually the indicator, because the reaction between ascorbic acid in vitamin C and iodine will remove the color from iodine.
Observations made in this study is the color change and the number of drops of sample solution. The less the number of drops of sample solution shows the higher vitamin C content in the sample. From this experiment concluded that the highest vitamin C content in succession was on lime, tomato, carrot and cucumber. Bengkoang showed negative test of vitamin C content, because bengkoang contains amylum. Heating will reduce vitamin C levels in food because vitamin C is susceptible to air, light, heat, and easily damaged during storage. Download
